Star-Shaped Cinnamon Biscuits

Star-shaped Cinnamon Biscuits

Ingredients:

400 g (14.1 ounces) ground almonds
3 egg white
80 g (2.8 ounces) flour
300 g (10.5 ounces) powdered sugar
1 tablespoon cinnamon
1 pinch ground cloves

For icing:
1 Egg white
120 g (4.2 ounces) powdered sugar
1 lemon (zest and juice)

Procedure:

1. Dough

Blend the eggs with sugar, then mix the other ingredients (flour, cinnamon, cloves & almonds) and fold into the fluffy mass. Put the dough into the fridge for 2 hours.

2. Shape

Roll out the dough on a floured countertop and cut out the cookies.

3. Glaze

Beat egg white to a snowy consistency and stir in sugar. After 10 minutes add lemon zest and lemon juice. Now cover each cookie in the glaze and put them in a preheated (160°C) oven for about 15 minutes.
